Kristina’s Tomato Chicken
A simple chicken dish simmered in tomatoes and cream sauce for a quick entré to serve with rice. Quick and easy, perfect for a chilly fall evening!
Ingredients
- 1 can Diced Tomatoes
- 2 lbs. Chicken Breast
- 3 cloves of Garlic
- 1/2 cup Chicken Broth
- 1/2 cup Heavy Cream
- Olive Oil
- White Rice
- Nons (Original or Pepper Complex)
- Black Pepper
Preparation and Cooking
Clean chicken, pound out with mallet to about 1″ thick and cut into chunks. Dice garlic and saute in olive oil with a few pinches of salts and black pepper, add chicken and cook until browned. Stir in tomatoes, broth and cream then simmer for 20 minutes.
Serve over rice prepared by package directions. Serves 3 – 5
