This is a great way to have a healthy dinner waiting for you when you return home! Easy prep for a flavor packed vegan quinoa slow cooker dish! Thanks to Tom Dowd for the share!
Ingredients
- 1.5 cups Quinoa
- 3 cups vegetable stock
- 1 small onion, chopped
- 1 tablespoon olive oil
- 1 medium red bell pepper, chopped
- 1 large carrot, chopped
- 2 cups fresh green beans, chopped
- 1 can Garbanzo beans, drained/ rinsed
- 1 can black beans, drained/ rinsed
- 3 cloves of fresh garlic, minced
- 1 teaspoon cilantro
- 1/4 teaspoon fresh black pepper
- 1/2 teaspoon Non’s Original *
* add more to taste when serving
Preparation and Cooking
Rinse Quinoa and pour into large slow cooker, add olive oil and stir to blend. Add all ingredients and stir, reserving cilantro for serving.
Cover and cook on low for 4-6 hours, or High for 2-4 hours. Quinoa is done when it’s tender, liquid is absorbed and fluffs easily with a fork.
Top with Cilantro and serve!
